Bourbon Lover's Fruitcake
Ingredients:
2 oz. Elijah Craig Barrel Proof Bourbon Whiskey (or your bourbon of choice)
1 cup Dates (chopped)
1 cup. Italian maraschino cherries (Luxardo's)
1 & 1/2 cup Craisins
1/2 cup Walnuts (chopped)
1/2 cup Pecan (chopped)
1 cup Dark brown sugar
1 pc. Egg
1 tsp. Baking Soda
1 stick Butter (1/2 cup melted)
1 tbsp. Orange zest
1 cup Sour Cream
1 & 3/4 cup All-purpose flour
1/4 cup All-purpose flour (for dredging)
1 tsp. Salt
1/2 tsp. Vanilla
*Save some of the fruit and nuts which you intend to use to decorate.
Instructions:
1. Preheat the oven to 325F.
2. Lightly brush the loaf pan with butter.
Alternatives: Silicon loaf pan or line with parchment paper
3. Combine the fruit & nuts in a mixing bowl: dates, cherries, craisins, walnuts and
pecan. Dredge the mixture in 1/4 cup of flour to evenly coat, set aside.
4. In a bowl, fold in the baking soda with the sour cream - set aside.
5. Mix the butter & brown sugar, beat until it's creamy in texture. Drop in the egg,
zest, salt, vanilla & orange zest - blend for at least a
